Simply insert the probe into the thicket part of the meat or poultry until the "dimple" reaches the centre of the meat. Place meat in the oven with the thermometer facing the oven door. Leave the thermometer in meat while roasting. When the temperature pointer reaches the desired temperature, remove the meat from the oven.
To periodically test accuracy, immerse the probe in boiling water where the thermometer should reach the "Boil Test" indicator.
